Summer salad with sun dried tomatoes and goat cheese

This healthy salad is one of my favourite ways to enjoy lunch during summer time. It is fresh, tasty and savory. It leaves me feeling full, yet isn’t heavy, which is exactly what you need during hot weather!

What you will need for the salad:

  1. Spinach leaves
  2. Sun dried tomatoes
  3. 1 avocado
  4. 2 cucumbers
  5. 1 pack of smoked salmon
  6. Goat cheese

For the dressing:

  1. Juice of half a lemon
  2. Olive oil
  3. Dijon mustard

Instructions

Cut up the cucumbers, avocado and sun dried tomatoes in small even pieces. Mix them in with the spinach leaves ,adding pieces of goat cheese and salmon. Mix all the dressing ingredients and pour it to over your salad.
