My top 5 breakfast meals – quick, easy and delicious

Breakfast is one of the most important meals of the day, but to be honest, I used to always miss it. I am not a morning person and preferred to sleep in before work, so I never really had the time to cook a proper meal. Coffee and lets go. This really was not working out well for my health, so I decided to change my routine.

 I needed recipes that were quick and easy to make, but at the same time tasted good.

As a result, the list of quick tasty breakfast meals was formed.

Recipe #1 – On the go smoothie

This is my top priority when I have literally 5 minutes before leaving the house. It is quick and can be consumed on the go. Oh and it is also extra healthy!

I literally crave this when I need a detox or have eaten junk food the night before!

Ingredients

  • Tvorog (cottage cheese) or Greek yoghurt (100gr)
  • 1 banana
  • A handful of strawberries or any other berries of choice (fresh or frozen)
  • 2 table spoons of chia seeds
  • 2 tea spoons of spirulina powder
  • 350 ml coconut water

Instructions

I personally like to put the tvorog and the banana in first, and add everything else after. I find this gives my smoothie a smoother blend.

Recipe #2 – The night before chia pudding

This is a great recipe, as it can be prepared the night before. It tastes more like a dessert and is extremely easy to make.

I find it perfect for summer, because of its cooling feel and refreshing taste.

  • Half a glass of chia seeds
  • Whole glass of coconut milk
  • 2 table spoons of honey
  • Berries

Instructions

Properly mix the chia seeds with the coconut milk and honey in a bowl. Cover it with something and leave it in the refrigerator for the night. In the morning take out and add berries. The consistency of the pudding should be quite thick, but you can control it by adding more or less coconut milk.

Recipe #3 – The good old porridge

Ok , it is a worldwide known fact that porridge is good for you. It is present in many diets and is recommended for breakfast by many dietitians. My problem with porridge, was mostly its unattractive façade.

To solve this, I started adding berries, nuts or dried fruit to it. This way it not only looks better, but tastes great too!

Ingredients

  • water ( 1 glass)
  • milk ( 1 glass)
  •  oats (1 ½ glass)
  • Berries, nuts or dried fruit

Instructions

Mix water and milk together in a pot and let it reach boiling point. Add sugar and salt according to your preferences. Pour in the oats and start mixing it slowly, until it starts forming a porridge like consistency. After this take it of the stove, cover it with something and let it stay like that for a few minutes.  If you want you can also add a piece of butter into it. Put a portion on a plate, add your topping of choice and voilà!

Recipe #4 – The gourmet Sandwich

This is a really great filling breakfast meal, and in addition it gives you lots of energy and tastes delicious.

The salmon and cream cheese combo, is one of my favourites. If you haven’t tried it, you really are missing out on a lot!

Ingredients

  • Whole grain Rye Bread / fitness  bread
  • Natural light cream cheese or goat cheese
  • Smoked salmon

Instructions

Swipe the cheese on the bread and add pieces of smoked salmon on top. This can easily be made in to a great canapé at a party.

Recipe #5 – The luxury egg sandwich

This recipe takes more time, therefore it is usually my weekend pleasure. It is savory and will for sure impress anyone you cook it for.

I love all types of eggs, especially the Benedict. And there is a secret on how to get it perfect all the time.

Ingredients

  • egg (1 piece)
  • cheese of your choice (1 slice)
  • salad leaf ( 1 piece)
  • Cucumber slices
  • Sweet chili sauce / any sauce of your liking
  • Salami or turkey
  • Bread of your choice

Instructions

Pour water in a pot and let it reach boiling point. Take an egg and put it into a sandwich bag, making sure the yolk doesn’t break, moving it to the corner of the bag. Tie the bag around the egg, meaning that the only space there is , is the one the raw egg is in. Put the egg bag into the pot leaving the tail of the bag out. Wait for about 3-5 minutes and take it out. While the egg is cooking, take a slice of bread and add the other ingredients. I personally like to go in this order: Salami, salad leaf, cucumber , sauce, cheese. After warming it up in the microwave for a few minutes, add the egg on top.
